Mutha Sauce

Mutha Sauce¼ cup salad oil
½ cup diced onion
½ cup diced green onion
1 tsp minced garlic
2 tbl Worcestershire
2 tbl brown sugar
2 tbl yellow mustard
¼ teasp black pepper
¼ can chipotles in adobo
2 tbl dark karo corn syrup
¼ teasp allspice
1 cup water
1 tbl white vinegar
½ cup ketchup
½ cup chunky style marinara

Heat oil in heavy sauce pan, add onion, green pepper and garlic. Sauté 3 to 4 minutes, brown garlic slightly. Add all ingredients, except ketchup and marinara, stir well and simmer slowly for 30 minutes. Remove from heat add ketchup and marinara. Yields about 3 cups.


Sheppard's Pie

Sheppard's Pie2# Ground beef
1 cup onion diced fine
½ cup carrots diced medium
½ cup each frozen corn, green-beans, and peas
1 tbl minced garlic
½ teasp black pepper
½ teasp thyme
11/2 cups beef gravy
1 cup ketchup
3 cups mashed potatoes
¼ stick butter

In a heavy skillet combine beef, onions, carrots, and garlic. Brown beef, mixing well. Drain oil. Add black pepper, thyme and ½ cup water, simmer low for 10 to 15 minutes until carrots are tender, add frozen vegetables, simmer 1 to 2 minutes, remove from heat, add gravy and ketchup. Pour into a 9 by 9 by 3 baking dish, spread mashed potatoes over top, dot with butter, bake at 350 for 10 minutes.
